Simple Supper : Buttered Spaghetti for Grown Ups.


Who doesn't love buttered noodles with salt? To me, it screams comfort food. Last night I drove all the way to Beverly Hills to buy a birthday gift for my bro. I was feeling fine. No traffic, embarrassingly hard core rapping with Eminem, and a parking spot right in front of the store. Couldn't get any better. Until I opened my purse to grab my credit card to pay the meter, whoopsie! No card, no driver's license.

At this point, I'm steamed and hungry and haven't been to the grocery store in well over a week. I turned to my pantry and threw together the most simple and belly warming recipe. Seriously, this pasta brought me straight out of my funk. It's buttered noodles...but not.

  • Spaghetti
  • 2 tbsp of Butter
  • Basil
  • Red Pepper Flakes
  • Cherry Tomatoes
  • Salt to taste
  • Parmigiano-Reggiano
Cook spaghetti according to package instructions. Saute 1 tbsp of butter with tomatoes until they start to blister and burst, add basil and red pepper flakes (if you want it spicy, which I do!). Add cooked spaghetti and toss. Add last tbsp of butter to coat along with salt to taste. Top with shaved Parmigiano-Reggiano.
